A 165mm santoku forged from white steel — the high-carbon steel favored by professional Japanese knife makers for its exceptional edge sharpness and ease of resharpening. The blade takes a keen edge and holds it through daily use; when it eventually dulls, a few passes on a whetstone bring it back fully.
The handle is covered in a dense allover pattern of plum blossoms — orange, red, yellow, and gold blooms layered across a deep navy lacquer ground. Plum blossom (ume) is one of the most beloved motifs in Japanese art, associated with perseverance and the first signs of spring. The result is a handle that feels as considered as the blade. Part of the Yuzen Saido series. Made in Japan.
