A 165mm santoku forged from white steel — the high-carbon steel favored by professional Japanese knife makers for its exceptional edge sharpness and ease of resharpening. The blade takes a keen edge and holds it through daily use; when it eventually dulls, a few passes on a whetstone bring it back fully.
The handle is the piece that sets this knife apart. Black lacquer is hand-decorated with a flowing vine of crimson lotus and chrysanthemum in red, gold, and green — a motif drawn from the Yuzen dyeing tradition of Kyoto. The result is a knife that works as hard as it looks. Part of the Yuzen Saido series. Made in Japan.
